Dark Chocolate

~Dark chocolate is my favorite! This is known by all my friends, especially JH, who brings me chocolate from Trader Joe's. The 72% is good, but i prefer the regular dark chocolate. It is not too sweet (like Hersheys), but still melts in your mouth, like milk chocolate. Life is too short not to eat good dark chocolate!

~I attended the DoK meeting & am now feeling better about things. I plan to renew for another year.

~At Goodwill, I got another name-brand cord cover shirt.

~Back home, I spent the rest of the afternoon crocheting. I made a Roseburg Hat in Caron Pounder Black/Mainstays Vallejo Tan & a Neckwarmer in retro Phildar Horizons (like the "new" style shaded tweed yarns-not so new, hey!) acrylic/wool Grassland (pale cornmeal yellow shaded with olive green & light rusty brown). I added two brown leather buttons. It is very handsome!

~We had burgers for supper & watched Sucker Punch. It was very strange, reminding us in the look of Sin City, but the fact that it had chicks with guns made it watchable! :)

Good Crackers!!

These crackers are AWESOME with Jif Super Chunky peanut butter. They are hearty enough to keep you full for quite a while. I will make 5 "sandwiches" & take them with me for "emergency" food.

~I made a Green Chile hash brown casserole for the Breakfast fundraiser tomorrow at the church. I also vacuumed the rugs & dusted the furniture.

~I finished a Garland of Blossoms scarf in Patina/Multicolor. I also put a Dark rose flower pin on the Mardi Gras scarf. I unintentionally made a "Bonnet", by making the first round of a Roseburg Hat with 12 stitches instead of 10. It is pouffier on top, but just as cute. Oh, in Country Rose with a big faux pearl button. I spent the rest of the afternoon doing scrap stuff.

~I made Mike a chicken bacon cheese wrap for supper.

Ken's Steakhouse Dressing

Ken's Steakhouse Dressing is the most-flavorful, lower-carb dressing I have ever tasted! The Chunky Blue Cheese is my favorite. I use it on salads, as a spread for sandwiches & dip for chips. The Creamy Caesar is my second-favorite & I use it in my Sausage Spinach casserole. Mike will only eat Thousand Island & this is the lowest-sugar brand. Worth the extra cost!


~Mike drove me to work & did some stuff on the A/C's before heading off to a Napa meeting. I brought Norm some Golden Raisin Oatmeal cookies,which he said were good, mailed/filed bills, worked on the newsletter, bulletins & prayers of the people.


~I made Mike a chicken bacon cheese wrap while I had leftover Dirty Rice.


~I worked on the Cabin lap blanket, making 4 squares in tan/blue.

Hormel Turkey Pepperoni

I love pepperoni, but not the greasy taste of regular. This turkey pepperoni has a great flavor, but isn't greasy. I put 17 slices(a serving size) on a Carb Chopper tortilla with a slice of cheese & warm it up in the microwave. I then put a line of Ken's Steakhouse Blue Cheese dressing(product review on this later)done the center & enjoy!. This pepperoni is also good as a spicy "condiment" in salads, soups & other bland dishes.


~I had nothing planned for today but to find carnations for a good price for handing out at church on Sunday for Mother's Day. It turned out that the first place I went Candelaria Albertsons, had them for 3 for $12. Most bunches had 7,but I was able to find 4 bunches with 8. I was able to get 89 carnations, in different colors, for $48! I took them up to the church, put them in water & called Anne to let her know. She said it was a good price! My "chore" for the day was done by 9:15 a.m.


~I went to the Family Thrift Center(nothing) & Goodwill. I found a platter in a style pattern that Mom Dee had a few dishes of & a green glass egg tray, both for $5! I will post picturtes at a later time.


~I made a Flapper Beanie in RHS Coffee/RHS Cherry Chip, a Barstow Hat in RHS Coffee/unknown Taupe/unknown Olive. I also worked on scrap granny squares.


~We had grilled hotdog wraps for supper.


~I worked on the Green/Tan/Blue lap blanket. I need to come up with a name for this multicolor.

Bacon & tray!

I use this Nordic Ware microwave tray to cook the bacon below. I line it with a paper towel, put one layer of bacon on the put another paper towel over the bacon. Soaks up the grease & keeps it from splattering.
We were eating the Walmart brand of bacon, but I had a coupon & tried this Farmland brand. It is the smokiest by far! I cook up the whole package at one time using the tray above & store it in the fridge. We use it more like a condiment, as a flavoring for omelets & wraps.


~I finished the RHS Aruba Sea Comforting Shawl while watching news & drinking mocha this morning. I do have to weave in 4 ends, but it turned out very pretty! After being blessed, it will go to Gladys, via St. Mary's Prayer Shawl Ministry. She is graduating from nursing school May 13th & a celebration will be held for her.



~Mike drove me to work & finished what he could on the a/c. Now just to wait for the plumber to come look at the water lines. I was a little behind on printing bulletins, but did get them done. I also printed out more pamphlet labels. We gave out 11 bags at the food pantry. One of the regular ladies gave me Whopper eggs!


~I came home to a HUGE box from Karen: yarn, wall hangings, note cards, socks & a skirt. WooHoo!!



~Date Nite: After warm up, we did all weak-hand drills, which included drawing from the holster, reloading, failure drills, but, thankfully, no clearing of malfunctions. I did practice, during the break, clearing of Class-3 malfunction(double feed) & found a way that works for me. My Kahr is 3.75" & i cannot lock back the slide with one hand, so I hook the bottom of the magazine on my shoe & strip it out while holding the mag-release button. It ain't pretty or particularly fast, but it gets the job done.

Hot Dog!

This is another item we started eating during our low-carb days, mainly because it was the lowest carb(1 gram) hot dog that could be eaten cold or hot. We wrap these in either Santa Fe Tortilla Company's Carb Chopper or Flat Out Light Original wraps with a slice of American cheese & grilled them in a skillet with non-stick spray. Dipped in classic yellow mustard, they make a great, quick supper! Mike also takes one in his lunch every day.


~I stopped off at Big Lots(juice for Coffee Hour) before heading up to the church to load bags at the Food Pantry. I also sorted mail & put the palms leftover from Sunday in the Sacristy for the Altar Guild to burn next year for Ash Wednesday.


~I picked up 2 bottles of Torani's sugar-free styrup, Raspberry & Caramel, at Lomas Albertsons.


~At Goodwill, I found 2 tank top, one in Turquoise & one in mottled lavender with lace, beads & sequins around the neck.


~Back home, I made Cinnamon Almond Coconutty bars, swept the floors and did a load of laundry.


~I finished the edging on the RHS Country Blue Diamond prayer shawl & also finished the Colorways granny square lap blanket.


~We had grilled hotdog wraps for supper.

Apple Butter

R.W. Knudsen Organic apple Butter-I have always preferred apple butter over any jelly/jam/preserves on peanut butter. This apple butter is nothing but apples & apple juice, no added sugar. It tastes like my grandmas! It is also good on corn bread. I can only find it at the Albertsons on Jaun Tabo/Candelaria in the health food section.

~At the office, I worked on bulletins, typed up a report for Mutual Ministry Review, started the May newsletter.


~I worked on granny squares.

DaVinci Syrup

A great sugar-free way to sweeten coffee. Mike uses this in the morning(raspberry)/evening(caramel) mocha drinks he makes me. I also use it to make Sweet Cream Cheese spread(1/3 fat cream cheese+2Tbsp syrup). Sadly, I can only find 3-4 (it comes in 50!) in grocery stores of the sf flavors. It is heavy,so the cost of shipping makes it prohibitive to mail-order.

~I did my normal Monday morning stuff, I just had Mike chauffeur me around! Big Lots for soup, loading food bags at the Food Pantry, Hobby Lobby for a skein of I Love This Yarn Dark Olive(used the last of my $25 gift card) & Goodwill. Mike got a shirt & used a "senior-55" discount for the first time ever! I have always told him that's why I married him-to get the senior discount 13 years early!!


~Back home, I made a pan of fudge brownies. After lunch, we went to Susan's to see what is needed to get her a/c up & running. Mike plans to do it tomorrow.

~I have to admit that i watched trash TV & took a nap!


~I worked on the Rainbow rr lap blanket, finishing off the purple.


~We watched 3 more episodes of Justified Season 1.

Santa Fe Carb Chopper Tortillas

Our mantra is "Fiber is our friend!" One of these wraps has 7 grams!! I have one every day for lunch with Jif Extra Crunchy peanut butter & Knudsens organic apple butter. I sometimes have these twice a day as they are fast & filling. They get brown & crunchy when grilled in a skillet.


~It has turned cold & I had to wear a tweed blazer to work! I worked on bulletins & the newsletter most of the day. Norm came in & payed the bills,which I mailed/filed. I dropped off Peanut Butter Crispies for the Napa boys on the way home.

~I started a Round Ripple with vintage Orange & finished the Light Gray/Scrap granny square lap blanket. I did have to do the edging in Black,becuase I ran out of the Light Gray.

~We watched "Legend of the Guardians:The Owls of Ga'Hoole". I wasn't too sure about it at first, but I ended up liking it. It clearly had good vs. evil & good won.

Hershey's Special Dark Cocoa Powder

I have to admit, I am a Dark Chocolate ho! I love this cocoa powder because it is sugar-free & has fiber & iron. Mike makes me a mocha drink every morning & 2-3 times a week in the evenings. I will sometimes use it in baking,but have found that I need more sweetener than when using regular cocoa powder.
Cat's Mocha
20-oz. dark roast coffee
1Tbsp Hershey's Special Dark Cocoa powder
1Tbsp 1/2 & 1/2
2Tbsp DaVinci's sugar-free Raspberry syrup(review on this product at a later date)
Cheaper than coffeehouse drinks,but just as yummy!

~Mike drove me to owrk. At the office, I wrote up the minutes from last nights Vestry meeting, paid bills, enjoyed Coffee Hour, worked on the newsletter & bulletins. I sorted through the donated yarn & most of it is wool or wool-blend,which we can't use for prayer shawls or lap blankets. I'll have Lucy & Anne look through it. If they don't want it, I'll use it for other stuff.

~I made a Sweet Skullcap in RH Lustersheen White with Country Rose flower pin.

~We had grilled cheesy hotdog wraps for supper.

~I finished the Peruvian granny lap blanket. It is gorgeous!!

~We watched Salt. It was just ok. She was a chick with a gun(cool!), but I like movies with happy endings & this was not it.

Pepper Jack Cheese

I like a little "heat" in my breakfast, so I add a slice of Tillamook Pepper Jack cheese to my omelet wrap. Though a little more expensive then other brands, this cheese is thick sliced & more flavorful.


~Mike drove me to work, where I had the office to myself for about an hour until Ms. Jeannine came in for bulletin edits. Fr. Jim came in around 10:45am. I got all the bulletins done by 11:30am. I started on next weeks bulletins. Mike came by & watered the trees.

~I started a new Scroogey scarf in unknown cream/scraps.

~I made Mike a chicken bacon cheese wrap for supper. I had PB/AB wrap.

~Mike had a Napa meeting, so no Date Nite. I crocheted & watched Men in Black.

CARBmaster Yogurt

This is our nightly treat! I learned about it from my father,who is diabetic. He also eats this as his daily treat. 80 calories, 4 carbs(1 is fiber), 12 grams protein. We add a tsp chopped pecans & 2 Tbsp FiberOne Honey Clusters cereal. Mike likes Cherry & Raspberry. I like Blackberry & Raspberry. They are found at Kroger & Smith's. There are many more flavors. Try it!

~We got groceries at Walmart & Smiths.

~I helped Anne usher at the 10:30am service & helped with coffee hour afterwards. I also helped at Wii Game Day. It seemed like the kids had a good time. I started a Garland of Blossoms scarf while there in vintage Dazzleaire in a Dusty orange mix & Olive. It's very pretty! Mike came to 4:30pm service.

Turkey Breakfast Patties

On the road, we looked for ways to cook in the truck with limited space for a small microwave & dorm-size refrigerator. We started using the Great Value Pork Sausage Patties from Walmart & found them to be tasty & convenient. We continued using them when we came off the road. We have since switched to the Turkey patties to save on calories & fat. The taste is different,but still good. I cut one up every morning in our omelet.


~At the office, I worked on the newsletter & printed one out for final edits. I also worked on bulletins & Vestry/Committee lists.

~I dropped off Oatmeal Chocolate Rainbow Chip cookies for the Napa Boys.

~We had chicken bacon cheese wraps for supper.

~I made 4-round granny squares in RHS Peruvian Print.

~We watched "Knight & Day". I don't like Cameron Diaz(too goofy)to begin with,but they seemed to just mail it in. I do like chicks with guns, though, & there were some good chase/shooting scenes, so I would give it 2 1/2 out of 5 stars.

Flatout flatbread

These flatbreads are our substitute for bread(can't remember the last time we bought a loaf!). We use them for breakfast(wrapped around our omelet), for lunch(with peanut butter/apple butter, ham/cheese, etc) & supper(with burgers or chicken). They stay soft when microwaved & get crunchy when you grill them in a skillet. They come in different flavors(we also use the original, light original & foldit 5-grain flax), but the ones pictured above are our fav!


~I attended Prayer Shawl Ministry, picking up some yarn for a Diamond shawl.

~I dropped off both Granola Muffins & Peanut Butter Crispies for the Napa Boys. Bryan is allergic to bananas & Joe is allergic to coconut, so the reason for both.

~Back home, I made Orange Crasin Coconuttys.

~I made a Boa Scarf in CSS Blue Mint/Caron Feathers Night heron. I also made two toddler hats with the CSS Blue Mint-boys held together with fingering Navy & girls held together with fingering White. I ran out of the Blue Mint on the girl hat, so the last 3 rows are CSS White/fingering White.

~I attended music practice.

~We had grilled hotdog wraps for supper.

~I finished off the Tropical granny blanket with a round of sc in Cream.

~We watched Resident Evil-Extinction. Alyce's outfit is an option for halloween this year.

Progresso High Fiber Soup-Chicken Tuscany

I normally don't like canned soup, but this has to be my favorite! It is just spicy enough, has big chunks of chicken & carrots,along with Great Northern beans,which I prefer over kidney beans. I do eat the whole can at one meal,usually with some honey wheat pretzels & it keeps me full until supper-time.


~I drove Mike to work & started a load of laundry.

~I stopped by Big lots(nothing)before heading up to the church to help Chuck load bags at the Food Pantry. I stopped by Goodwill & found a dusty pink straw hat which will be used as part of a "Pretty in Pink" Andie outfit for a Decades birthday party.

~Back home, I made chocolate fudge brownies & finished laundry.

~I made a Cheyenne hat in LB Homespun Barley(will change the name) with a rose pin in RH Soft Paprika & a Boa Scarf in unknown Northern Lights/vintage Kmart Sayelle Gold.

~I picked Mike up at 4:30pm. His Bronco started when he tried it, so we have no idea what the problem is!

~We had grilled hotdog wraps for supper.

~I worked on the Tropical granny lap blanket.

~We watched "Inkheart". It is a good movie.
